Keep chocolate away from light, air and strong odours
When storing chocolate, it’s important to keep it away from light and air. Contact with any of these could lead to oxidation; a process which makes the chocolate’s fat disintegrate. This can cause flavour changes as well as an unpleasant smell.
Apart from light and air, avoid storing chocolate near strong-smelling products like cheese or fish. Chocolate has the tendency to absorb these smells and this can affect the taste. That’s why you should always store chocolate in a tightly closed container or sealed in plastic wrap.
